It’s one thing to know about a tasty, healthy bread option like ROYO, but sometimes we might be left wondering what to do with that bread, especially at breakfast when time is of the essence. You’re not in the mood for a sandwich but you’re also sick of smearing half an avocado on your bread every morning. Toast with a side of scrambled eggs? Total snoozefest.
The great part about breakfast toasts is that they can incorporate nutrients from many different food groups, so you can pack in flavor, protein, fiber, and vitamins in one neat and yummy package. Not to mention they’re pretty, simple to make, and open-faced, so easy to prepare and even easier to eat! And now that a lot of us are home more than ever, there’s no better opportunity to experiment with our toast options. So, without further ado, here are three of the best:
The Nutrish Toast: Hummus and Anjou Pear
Double up on the protein and fiber by adding these delectable ingredients to a slice of ROYO original or rye bread: Spread a tablespoon of hummus onto your toasted slice (homemade is best, of course, but most of the time we like Cedar’s organic). Then, thinly slice half of a small anjou pear (or another pear type, per your liking) and fan it across the hummus. We always aim for a beautiful plate!
Hot tip: For a little extra oomph on the pear, a little Maldon salt goes a long way. If you’re feeling frisky, drizzle the top with a teaspoon of olive oil. If you’ve got some extra dill in the fridge, chop it up and place it on top for a green garnish.
The Decadent Toast: Mascarpone and Toasted Walnuts
Our favorite delightfully indulgent morning toast is bound to keep you full all day thanks to a hearty tablespoon of mascarpone cheese (a total upgrade from cream cheese or ricotta). Slather it on and throw on some toasted walnuts for some texture and a salty bite. The key to the decadence here, though, is the sweet-and-spicy finishing touch: Mike’s Hot Honey, infused with chilis. (Alternatively, go for a sprinkle of fresh black pepper and a drizzle of regular, real honey.) We especially like this one on sesame ROYO.
The Bougie Toast: Kalamata Olive Tapenade and Fig
There are few things more tangy and delicious than the kalamata olive. Crush it up and add some garlic, vinegar, and seasoning? Next. Level. Good. (And don’t forget about those healthy fats.) For a solid morning toast, we recommend spreading a tablespoon of kalamata olive tapenade onto any flavor of ROYO (although za’atar and sesame are speaking to us) following by some sliced fresh figs, which add a syrupy sweetness to cut the acid of the olives. This one is as exotic as it is tasty.
Remember, the key to any good toast is a very well toasted slice of ROYO (or two!), a creamy spreadable element containing some fat, and a delicious topping that lends texture and bulk. Until lunchtime!
